These delicious cookies are made with a thin layer of syrup sandwiched between 2 thin waffles. Many people enjoy them warm, either by placing the cookie over your cup of hot coffee or on the mug of brewing tea. They can also be placed in the microwave on a paper towel or plate for 10 or so seconds to warm the syrup and make the cookies that much more delicious!

This delicious treat is best served fresh, hot off the press, but since that can't be done here, if you ever happen to be in Amsterdam stop by the Alpert Cuyp market and visit the waflemaker there, serving up wafles from his truck. You can't miss him from the wonderful scent. This is a staple in my house and as stated is incredible with coffee (who needs a teaspoon of sugar?) Try one in a bowl with a scoop of ice cream over it.
